I love breakfast sandwiches. I honestly went through this phase in college when I would order bacon, egg and cheese on a croissant because A) it tasted wonderful and B) I thought it was healthier. Shows how skewed my health perception was! Anyway, I got through that phase and every now and then I still like to order a good bacon egg and cheese on a bagel or roll on a Saturday morning (shout out to spring street deli!!)
However, when I have the urge for one of these creations while at home, I like to make what is now referred to ad the “Meg McMuffin.” I have made it for my husband, my sister, my mom and my friends. I think my stepdad Dave is still nervous to try anything I make because he knows my cooking skills started off pretty rocky. I’ll get him one day!!
So this simple creation is just bacon, an over easy egg and a slice of American cheese on a toasted English muffin. I prefer adding pepper and shredded manchango cheese to mine for a little more flavor:)
